Ingredients

Scale
  • 4 large eggs
  • 1 cup heavy cream
  • 1 cup shredded cheese (cheddar, gruyere, or your choice)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon fresh thyme, chopped
  • 1 teaspoon fresh chives, chopped
  • 2 sheets puff pastry
  • 1 tablespoon butter (for greasing)
  • Fresh parsley (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Roll out puff pastry on a floured surface and cut into rectangles.
  3. Grease ramekins or a baking dish with butter.
  4. Place pastry rectangles into each dish, layering if desired.
  5. In a bowl, whisk eggs, heavy cream, salt, pepper, thyme, and chives.
  6. Stir in most of the shredded cheese, reserving some for topping.
  7. Pour egg mixture into pastry-lined dishes, filling just below the rim.
  8. Sprinkle remaining cheese on top.
  9. Bake for 25–30 minutes until eggs are set and tops are golden.
  10. Let cool for 5–10 minutes before serving.
  11. Garnish with fresh parsley and serve warm.

Notes

  • Use cold puff pastry for best flakiness.
  • Mix cheeses like cheddar and gruyere for deeper flavor.
  • Add cooked bacon, spinach, or mushrooms for variation.
  • Avoid overbaking to keep eggs soft and creamy.
