Beef Stroganoff Tortellini is a creamy, one-pan comfort dinner made with tender cheese tortellini, savory ground beef, and a rich stroganoff-style sauce—ready in just 30 minutes.
Ingredients
1 lb ground beef 80/20 preferred
1 medium yellow onion diced
2 cloves garlic minced
1 tablespoon Dijon mustard
1 tablespoon Worcestershire sauce
2 cups beef broth low sodium
2 cups refrigerated cheese tortellini
1 cup sour cream full-fat
1 tablespoon olive oil optional
Salt to taste
Black pepper to taste
2 tablespoons chopped parsley optional garnish
Instructions
Heat a large skillet over medium-high heat and cook the ground beef until browned, breaking it apart as it cooks. Drain excess fat if needed.
Add the diced onion and garlic. Sauté for 2–3 minutes until softened and fragrant.
Stir in Dijon mustard and Worcestershire sauce. Pour in the beef broth and scrape up any browned bits from the pan.
Add the cheese tortellini, cover, and simmer for 5–7 minutes, stirring occasionally, until tortellini is tender.
Remove from heat and gently stir in the sour cream until creamy. Season with salt and black pepper.
Garnish with chopped parsley if desired and serve warm.
Notes
For best results, brown the beef well for deeper flavor and always stir in the sour cream off the heat to prevent curdling.
