Description

These Blueberry Blondies are soft, chewy dessert bars filled with juicy blueberries and creamy white chocolate. With a buttery base and golden edges, this easy homemade treat is perfect for summer gatherings, brunch, or a sweet afternoon snack.


Ingredients

  • ½ cup unsalted butter

  • ½ cup white chocolate chips

  • 1 cup granulated sugar

  • ½ teaspoon vanilla extract

  • 2 eggs

  • 1 cup all-purpose flour

  • ½ teaspoon salt

  • ½ cup fresh blueberries, washed and dried


Instructions

  1. Melt the butter in a saucepan over medium heat. Place the white chocolate chips in a bowl or measuring cup.

  2. Pour the hot melted butter over the white chocolate chips and let sit for 5 minutes. Whisk until smooth and combined. Allow the mixture to cool for about 30 minutes until slightly thickened.

  3. Preheat oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper. Lightly coat with nonstick spray.

  4. In a mixing bowl, combine the cooled butter-chocolate mixture with the sugar. Whisk for 1–2 minutes until glossy and slightly thick.

  5. Add the vanilla extract and eggs. Whisk until fully incorporated.

  6. Add the flour and salt. Gently fold with a spatula until the batter just comes together.

  7. Carefully fold in the fresh blueberries without overmixing.

  8. Spread the batter evenly in the prepared pan.

  9. Bake for 35–45 minutes, until the edges are golden and a toothpick inserted in the center comes out with a few moist crumbs.

  10. Allow the blondies to cool completely before removing from the pan and cutting into bars.

Notes

Do not overmix the batter to keep the blondies soft and chewy.

Fresh blueberries work best for texture and flavor.

Allow blondies to cool fully before slicing for clean edges.

Store in an airtight container at room temperature for up to 5 days.
