Ingredients

Scale

For the Bruschetta Topping:

  • 4 Roma tomatoes, diced
  • ¼ cup fresh basil, chopped
  • 1 garlic clove, minced
  • 1 tablespoon extra virgin olive oil
  • 12 teaspoons balsamic vinegar
  • Salt, to taste

For the Cheese Mixture:

  • 8 oz feta cheese, crumbled
  • 4 oz cream cheese, softened
  • ½ cup sour cream
  • 1 garlic clove, minced
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon olive oil
  • Salt, to taste

For Garnish:

  • Fresh basil, chopped
  • Red pepper flakes
  • Freshly grated Parmesan cheese

Instructions

  1. Prepare the Bruschetta:
Dice tomatoes and add to a bowl with basil, garlic, olive oil, balsamic vinegar, and salt. Mix gently and let marinate for 10 minutes.
  2. Make the Cheese Base:
In a food processor, combine feta, cream cheese, sour cream, garlic, lemon juice, and olive oil. Blend until smooth and creamy.
  3. Taste and Adjust:
Add salt if needed, keeping in mind feta is naturally salty.
  4. Assemble the Dip:
Spread the cheese mixture evenly in a shallow dish. Top with the marinated tomato mixture.
  5. Garnish and Serve:
Sprinkle with basil, red pepper flakes, and Parmesan. Serve with bread, crackers, or crostini.

Notes

Drain excess tomato juice to prevent a watery dip

Use high-quality olive oil for the best flavor

Substitute feta with goat cheese or ricotta for a milder taste

Add balsamic glaze on top for extra flavor

Best served fresh but can be stored for up to 2 days
