Ingredients

  • 2 tablespoons olive oil

  • 10 ounces cherry or grape tomatoes

  • ½ teaspoon truffle salt or regular salt (plus more to taste)

  • ¼ teaspoon ground black pepper (plus more to taste)

  • 1 medium shallot, finely diced

  • 3 cloves garlic, minced

  • 1 (15-ounce) can butter beans, including liquid (do not drain)

  • 2 tablespoons vegan cream cheese

  • ½ cup fresh basil, chopped


Instructions

  1. Finely dice the shallot, mince the garlic, and chop the fresh basil.

  2. Heat olive oil in a large skillet over medium heat. Add the cherry tomatoes, salt, and pepper.

  3. Cook for 5–8 minutes, stirring occasionally, until the tomatoes burst and release their juices. Gently press stubborn tomatoes with a spatula if needed.

  4. Add the diced shallot and minced garlic. Cook for about 3 minutes until softened and fragrant.

  5. Add the butter beans with their liquid. Stir and bring to a gentle simmer. Cook for 5 minutes to slightly reduce and thicken the sauce.

  6. Stir in the vegan cream cheese until fully incorporated and creamy.

  7. Turn off the heat and fold in the chopped basil. Adjust seasoning with additional salt and pepper if needed.

  8. Serve warm with toasted bread and enjoy.

Notes

Best served fresh, but stores well.

Refrigerate in an airtight container for 3–4 days.

Freeze for up to 1 month.

Sauce will thicken when chilled — reheat gently on stovetop or microwave, adding a splash of water if needed.

Cannellini beans or pinto beans can be substituted.

Regular cream cheese or goat cheese can be used if not vegan.
