Ingredients

  • 2 tablespoons olive oil

  • 10 ounces cherry or grape tomatoes

  • ½ teaspoon truffle salt or regular salt, plus more to taste

  • ¼ teaspoon ground black pepper, plus more to taste

  • 1 medium shallot, finely diced

  • 3 cloves garlic, minced

  • 1 (15-ounce) can butter beans, liquid included

  • 2 tablespoons vegan cream cheese

  • ½ cup fresh basil, chopped


Instructions

  1. Finely dice the shallot, mince the garlic, and chop the fresh basil.

  2. Heat olive oil in a skillet over medium heat. Add tomatoes, salt, and pepper.

  3. Cook for 5–8 minutes until tomatoes burst and release their juices, gently pressing if needed.

  4. Add shallot and garlic, stirring and cooking for about 3 minutes until fragrant.

  5. Pour in the butter beans with their liquid and bring to a gentle simmer.

  6. Cook for 5 minutes, allowing the sauce to thicken slightly.

  7. Stir in the vegan cream cheese until fully combined.

  8. Remove from heat and fold in fresh basil. Adjust seasoning to taste.

  9. Serve warm with toasted bread.

Notes

Butter beans are best enjoyed fresh but can be stored in the fridge for 3–4 days.

The sauce will thicken when chilled; reheat gently before serving.

Do not drain the beans—this liquid creates the creamy texture.
