  • Total Time: 25 minutes
  • Yield: Per servings

Description

Perfectly seared California Corbina, complemented by a medley of vibrant vegetables and herbs. A light and flavorful dish inspired by the coastal waters!

Ingredients

Scale
  • 2 California Corbina fillets (or any white fish like sea bass or halibut)
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1/2 tsp ground cumin
  • Salt and pepper, to taste
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1/2 red onion, diced
  • 2 garlic cloves, minced
  • Juice of 1 lemon
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Season the fish:
Pat the Corbina fillets dry with paper towels. Mix paprika, garlic powder, cumin, salt, and pepper. Rub the seasoning generously on both sides of the fillets.

  2. Sear the fish:
Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Add the fillets skin-side down and cook for 3-4 minutes until golden and crispy. Flip and cook for another 2-3 minutes. Remove and set aside.

  3. Prepare the vegetables:
In the same skillet, add the remaining olive oil. Sauté the diced bell peppers, red onion, and minced garlic for 5-7 minutes until tender and slightly caramelized.

  4. Combine and finish:
Return the fish to the skillet, nestling it among the vegetables. Drizzle with fresh lemon juice and cook for another 1-2 minutes.

  5. Garnish and serve:
Sprinkle fresh parsley over the dish and serve immediately. Enjoy with steamed rice, quinoa, or crusty bread for a complete meal.
