1½ cups red lentils, rinsed and drained
6 cups vegetable broth or water
1 can (14.5 oz) diced tomatoes
2 carrots, diced
1 teaspoon salt (adjust to taste)
½ teaspoon black pepper (adjust to taste)
1 tablespoon lemon juice
Fresh parsley or cilantro for garnish (optional)
Instructions
Heat olive oil in a large pot or Dutch oven over medium heat. Add the sliced onions and a pinch of salt. Cook for 15–20 minutes, stirring occasionally, until the onions become golden brown and caramelized.
Add the minced garlic, ground cumin, and smoked paprika. Stir and cook for 1–2 minutes until fragrant.
