Description

This Christmas Salmon with Pomegranate Glaze is a festive, vibrant, and incredibly flavorful centerpiece for your holiday table. Sweet-tangy pomegranate, bright citrus, and tender baked salmon come together in a dish that feels gourmet yet simple enough for busy holiday cooks.

Ingredients

Scale
  • 2 lbs whole Atlantic salmon

  • ½ teaspoon kosher salt

  • ¼ teaspoon black pepper

  • 2 cups pomegranate juice

  • ¼ cup brown sugar

  • ¼ cup fresh squeezed orange juice

  • 1 tablespoon orange zest

  • Pomegranate seeds (for garnish)

  • Orange slices (for garnish)

  • Fresh parsley (for garnish)

  • Green onions (for garnish)

Instructions

  1. Prep the Oven: Preheat oven to 300°F (150°C). Line a baking sheet with parchment paper.

  2. Season: Lay the salmon skin-side down and sprinkle with kosher salt and black pepper.

  3. Make the Glaze: In a medium saucepan, combine pomegranate juice, brown sugar, orange juice, and orange zest. Bring to a boil, then reduce heat and simmer 20–25 minutes until thick and syrupy.

  4. Brush the Salmon: Generously coat the salmon with the glaze.

  5. Bake: Cook salmon for 30–38 minutes or until internal temperature reaches 145°F (63°C).

  6. Garnish: Transfer to a serving platter and top with pomegranate seeds, orange slices, parsley, and green onions.

Notes

If the glaze becomes too thick, add a splash of orange juice to loosen it.

Make the glaze up to 48 hours ahead and store in the fridge.

For easier serving, use a wide spatula to lift the salmon from the baking sheet.
