Ingredients
2 lbs whole Atlantic salmon
½ teaspoon kosher salt
¼ teaspoon black pepper
2 cups pomegranate juice
¼ cup brown sugar
¼ cup fresh squeezed orange juice
1 tablespoon orange zest
Pomegranate seeds (for garnish)
Orange slices (for garnish)
Fresh parsley (for garnish)
Green onions (for garnish)
Instructions
Prep the Oven: Preheat oven to 300°F (150°C). Line a baking sheet with parchment paper.
Season: Lay the salmon skin-side down and sprinkle with kosher salt and black pepper.
Make the Glaze: In a medium saucepan, combine pomegranate juice, brown sugar, orange juice, and orange zest. Bring to a boil, then reduce heat and simmer 20–25 minutes until thick and syrupy.
Brush the Salmon: Generously coat the salmon with the glaze.
Bake: Cook salmon for 30–38 minutes or until internal temperature reaches 145°F (63°C).
Garnish: Transfer to a serving platter and top with pomegranate seeds, orange slices, parsley, and green onions.
Notes
If the glaze becomes too thick, add a splash of orange juice to loosen it.
Make the glaze up to 48 hours ahead and store in the fridge.
For easier serving, use a wide spatula to lift the salmon from the baking sheet.
