- ½ cup red onion, diced
Dressing:
- 1 tsp chili powder
- ½ tsp kosher salt
- ¼ cup granulated sugar
- ½ cup olive oil
- ⅓ cup white wine vinegar
- 1 tbsp fresh lime juice
- ¼ tsp garlic powder
Instructions
- Drain and rinse the black beans, black-eyed peas, and corn. Pat dry.
- In a large bowl, combine beans, corn, cilantro, bell peppers, and red onion.
- In a separate bowl, whisk together chili powder, salt, sugar, olive oil, vinegar, lime juice, and garlic powder.
- Pour the dressing over the mixture and stir gently to coat evenly.
- Refrigerate for at least 30 minutes before serving for best flavor.
