Cozy Anti-Inflammatory Lentil Soup is a warm, nourishing vegan soup made with red lentils, turmeric, carrots, and lemon. Perfect for chilly days, meal prep, and feel-good comfort food.
Ingredients
1 cup red lentils, uncooked and washed
1 medium onion, chopped
2 medium carrots, chopped
1 medium celery stalk, diced
1 teaspoon turmeric powder
½ teaspoon ground cumin
½ teaspoon salt
½ teaspoon black pepper
4 cups water
Juice of ½ lemon
2 tablespoons olive oil
1 tablespoon fresh parsley, chopped
Instructions
Heat olive oil in a large pot over medium heat. Add the chopped onion and sauté for 3–4 minutes until softened.
Stir in the carrots and celery and cook for 1–2 minutes until slightly tender.
Add the washed red lentils and stir to combine with the vegetables.
Pour in the water and add turmeric, cumin, salt, and black pepper. Stir well.
Bring to a boil, then reduce heat to low and simmer uncovered for 30–45 minutes, stirring occasionally, until lentils are tender.
Remove from heat, stir in lemon juice, and serve warm topped with fresh parsley.
Notes
Add a splash of coconut milk for extra creaminess.
A pinch of red pepper flakes adds gentle heat.
This soup thickens as it cools—add water when reheating if needed.
