- 1/2 teaspoon salt (or to taste)
- 1/2 teaspoon black pepper (or to taste)
- 2 tablespoons olive oil (for cooking)

Instructions
- In a large bowl, mash the chickpeas using a fork or potato masher until chunky.
- Add garlic, lemon zest, parsley, breadcrumbs, cumin, salt, and pepper. Mix until well combined.
- If the mixture is too wet, add more breadcrumbs until it holds together.
- Shape into patties about 2–3 inches wide and 1/2 inch thick.
- Heat olive oil in a skillet over medium heat.
- Cook patties for 4–5 minutes per side until golden brown and crispy.
- Transfer to a paper towel-lined plate and serve warm with lemon wedges.
Notes
- Don’t over-mash the chickpeas—texture is key for the perfect bite.
- Add extra breadcrumbs if the mixture feels too soft.
- These patties can be made ahead and stored in the fridge for up to 4 days.
