Description

  • 2 cans chickpeas (15 oz each), drained and rinsed
  • 3 cloves garlic, minced
  • Zest from 1 lemon
  • 1/4 cup fresh parsley, finely chopped
  • 1 cup breadcrumbs (gluten-free if needed)
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper (or to taste)
  • 2 tablespoons olive oil (for cooking)
  • Optional: Lemon wedges for serving

Instructions

  1. In a large bowl, mash the chickpeas using a fork or potato masher until chunky.
  2. Add garlic, lemon zest, parsley, breadcrumbs, cumin, salt, and pepper. Mix until well combined.
  3. If the mixture is too wet, add more breadcrumbs until it holds together.
  4. Shape into patties about 2–3 inches wide and 1/2 inch thick.
  5. Heat olive oil in a skillet over medium heat.
  6. Cook patties for 4–5 minutes per side until golden brown and crispy.
  7. Transfer to a paper towel-lined plate and serve warm with lemon wedges.
