- 3.5 lb corned beef brisket (with spice packet)
- 1 sweet onion, quartered
- 1 lb carrots, cut in half
- 2 lbs small red potatoes, whole
- 1 (12 oz) beer
- 2–3 cups water (enough to cover beef)
- 1 green cabbage, cut into wedges
Instructions
- Place the quartered onion in the bottom of the slow cooker.
- Add the corned beef on top and sprinkle with the spice packet.
- Add carrots and potatoes around the beef.
- Pour in the beer, then add enough water to just cover the beef.
- Cover and cook on low for 9 hours.
- Add cabbage wedges and switch to high heat.
- Cook for an additional 1 to 1.5 hours until vegetables are tender.
- Remove beef, slice against the grain, and serve with vegetables.
Notes
For extra flavor, mix stone ground mustard, olive oil, honey, and apple cider vinegar into a quick sauce.
Slice the beef against the grain for the most tender texture.
