Ingredients

  • 3.5 lb corned beef brisket (with spice packet)
  • 1 sweet onion, quartered
  • 1 lb carrots, cut in half
  • 2 lbs small red potatoes, whole
  • 1 (12 oz) beer
  • 23 cups water (enough to cover beef)
  • 1 green cabbage, cut into wedges

Instructions

  1. Place the quartered onion in the bottom of the slow cooker.
  2. Add the corned beef on top and sprinkle with the spice packet.
  3. Add carrots and potatoes around the beef.
  4. Pour in the beer, then add enough water to just cover the beef.
  5. Cover and cook on low for 9 hours.
  6. Add cabbage wedges and switch to high heat.
  7. Cook for an additional 1 to 1.5 hours until vegetables are tender.
  8. Remove beef, slice against the grain, and serve with vegetables.

Notes

For extra flavor, mix stone ground mustard, olive oil, honey, and apple cider vinegar into a quick sauce.

Slice the beef against the grain for the most tender texture.

Add cabbage later to avoid overcooking.
