Description

Crunchy Detox Salad is a fresh, vibrant mix of finely chopped vegetables, nuts, and raisins tossed in a zesty lemon ginger vinaigrette. This easy, nutrient-packed salad is perfect for meal prep, healthy lunches, or a refreshing side dish that stays crisp for days.


Ingredients

  • 2 cups cauliflower, chopped
  • 2 cups broccoli, chopped
  • 1 cup red cabbage, chopped
  • 1 cup carrots, chopped
  • 1½ cups fresh parsley, chopped
  • 2 celery stalks, chopped
  • ½ cup raw almonds, chopped
  • ½ cup raw sunflower seeds
  • ⅓ cup organic raisins

Lemon Ginger Vinaigrette:

  • 3 tbsp olive oil
  • ½ cup fresh lemon juice
  • 1 tbsp fresh ginger, grated
  • 2 tbsp clover honey
  • ½ tsp sea salt

Instructions

  1. Finely chop all vegetables using a sharp knife or pulse each ingredient in a food processor until finely chopped but still textured.
  2. Add cauliflower, broccoli, cabbage, carrots, parsley, celery, almonds, sunflower seeds, and raisins to a large mixing bowl.
  3. In a mason jar or small bowl, combine olive oil, lemon juice, grated ginger, honey, and salt. Shake or whisk until well blended.
  4. Refrigerate the dressing for 30–60 minutes to enhance flavor (optional but recommended).
  5. Pour the vinaigrette over the salad and toss until evenly coated. Serve immediately or store for later.

Notes

For best texture, store salad and dressing separately until ready to serve.
