Ingredients

  • 1 cup chopped onion

  • 1 cup chopped celery

  • 1 cup chopped carrot

  • 1 cup chopped white fingerling potato

  • 2 garlic cloves, minced

  • 1 teaspoon sea salt (plus more to taste)

  • 1 teaspoon black pepper (plus more to taste)

  • 2 teaspoons turmeric

  • 2 teaspoons ground cumin

  • 2 teaspoons ground ginger

  • 2 teaspoons smoked paprika

  • 1 teaspoon ground cinnamon

  • 1 cup green or brown lentils

  • 1 cup red lentils

  • 4 cups vegetable broth

  • 2 cups water

  • 1/4 cup tomato paste

  • 1 cup almond milk (or coconut milk)

  • 1 tablespoon lemon juice

  • 23 cups spinach

  • Optional toppings: coconut yogurt, fresh parsley, pepper flakes, cracked pepper, jalapeño slices


Instructions

  1. Heat the avocado oil in a large stockpot or Dutch oven over medium heat.

  2. Add the onion, celery, carrot, potato, and garlic. Sauté for 5 minutes until softened.

  3. Sprinkle in the salt, pepper, turmeric, cumin, ginger, smoked paprika, and cinnamon. Cook for 2 minutes to bloom the spices.

  4. Add both lentils and sauté for 1–2 minutes.

  5. Pour in the vegetable broth, water, and tomato paste. Stir until fully dissolved.

  6. Bring the soup to a boil, then cover and reduce to a simmer for 30 minutes.

  7. Remove from heat and stir in the almond milk, lemon juice, and spinach until wilted.

  8. Adjust seasonings and serve with optional garnishes.

Notes

Coconut milk creates a richer, creamier texture.

Add extra broth if the soup thickens after sitting.

Garnishes add brightness, spice, and creaminess for a beautiful finish.

Great for freezing—just add spinach when reheating.
