  • 3 ½ cups russet potatoes, peeled and diced (about 2 large)

  • 1 ½ cups cooked honey ham, diced

  • ½ cup celery, diced small

  • ½ cup onion, diced small

  • 4 cups chicken broth

  • 5 tablespoons butter

  • ¼ cup + 1 tablespoon all-purpose flour

  • 2 cups milk (any percentage)

  • ¼ teaspoon black pepper

  • Salt to taste


Instructions

  1. Boil the vegetables and ham:
    In a large pot, combine potatoes, ham, celery, onion, and chicken broth. Bring to a low boil over medium heat. Cook for 10–15 minutes, until potatoes are fork-tender.

  2. Make the roux:
    In a medium saucepan, melt butter over medium heat. Whisk in flour and cook, stirring constantly, until lightly golden, about 1 minute.

  3. Add milk:
    Slowly pour in the milk while whisking continuously to prevent lumps. Cook for about 5 minutes, until thick and creamy.

  4. Combine:
    Pour the milk mixture into the soup pot and stir well. Add black pepper and salt to taste.

  5. Serve:
    Let simmer for a few minutes until thickened to your liking. Serve warm and enjoy.

Notes

Regular cooked ham can be used instead of honey ham.

For a thicker soup, simmer uncovered a few extra minutes.

For extra richness, stir in a small handful of shredded cheddar cheese before serving.

Store leftovers in the refrigerator for up to 4 days.
