½ cup finely diced onion
1 red bell pepper, diced
1 cup uncooked parboiled long-grain brown rice (or long grain white rice)
3 tablespoons fajita seasoning
⅛ teaspoon cayenne pepper (optional)
1 cup frozen corn kernels
1 (14 oz) can low sodium black beans, drained and rinsed
5 cups shredded chicken
3 cups reduced sodium chicken broth
1 (4 oz) can mild green chilies
1 tablespoon olive oil
2 tablespoons tomato paste
1¼ cups shredded Monterey Jack cheese

Optional toppings:
fresh cilantro
green onions
salsa
sliced avocado


Instructions

  1. Preheat oven to 400°F (200°C).

  2. Add diced onion, bell pepper, uncooked rice, fajita seasoning, and cayenne pepper to a 9×13-inch baking dish. Stir to combine.

  3. In a separate bowl, whisk together chicken broth, green chilies, tomato paste, and olive oil until smooth.

  4. Pour the broth mixture into the baking dish and stir with the rice mixture.

  5. Add shredded chicken, black beans, and corn. Stir well to combine all ingredients evenly.

  6. Cover the baking dish tightly with aluminum foil.

  7. Bake for 65–70 minutes, or until the rice is tender and most of the liquid has been absorbed.

  8. Remove the casserole from the oven and take off the foil.

  9. Sprinkle shredded Monterey Jack cheese evenly over the top.

  10. Return to the oven and bake for 5–10 minutes, until the cheese is melted and lightly golden.

  11. Allow the casserole to cool for 5–10 minutes before serving.

  12. Garnish with cilantro, avocado, green onions, or salsa if desired.

Notes

Cooking time may vary depending on your oven and the type of rice used.

If the casserole still looks slightly soupy when checked, give it a quick stir and return it to the oven for a few more minutes until the rice absorbs the liquid.

Parboiled brown rice typically requires about 70 minutes to cook fully.

For convenience, you can use rotisserie chicken or quickly cook chicken breasts and shred them before adding to the casserole.

This casserole reheats well and makes excellent leftovers for meal prep.
