- 2 cups old-fashioned rolled oats
- ½ cup nut butter (peanut butter, almond butter, or cashew butter)
- ⅓ cup honey (or maple syrup or agave)
- ½ cup mix-ins (chocolate chips, dried fruit, seeds, or nuts)
- 1 teaspoon vanilla extract (optional)
- Pinch of salt
Instructions
- Line an 8×8-inch baking dish with parchment paper, leaving extra on the sides.
- In a large bowl, mix oats and your chosen mix-ins.
- In a saucepan over low heat, melt nut butter and honey together until smooth.
- Stir in vanilla extract and a pinch of salt.
- Pour the wet mixture over the oats and stir until fully combined.
- Transfer to the prepared pan and press down firmly.
- Refrigerate for at least 2 hours until firm.
- Lift out using parchment paper, slice into bars, and serve.
Notes
Press the mixture firmly to prevent crumbly bars.
Adjust sweetness by adding more or less honey.
Store in the fridge for up to 1 week or freeze for up to 3 months.
Swap nut butter for sunflower seed butter for a nut-free version.
