Ingredients

  • 2 cups sweet corn (fresh, canned, or frozen)
  • 1 cup sour cream
  • 1 cup mayonnaise
  • 1 (8 oz) block cream cheese, softened
  • 2 cups shredded cheddar cheese
  • 1 cup shredded pepper jack cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon chili powder
  • Salt and black pepper to taste

Optional Mix-ins:

  • ½ cup chopped green onions
  • ½ cup diced red bell pepper
  • 1 jalapeño, finely chopped (seeds removed for less heat)
  • ¼ cup chopped fresh cilantro

Instructions

  1. Prepare the corn: cut kernels from fresh corn, or drain canned corn, or thaw frozen corn and remove excess moisture.
  2. In a large bowl, mix sour cream, mayonnaise, and softened cream cheese until smooth.
  3. Stir in cheddar and pepper jack cheese.
  4. Add garlic powder, onion powder, smoked paprika, chili powder, salt, and pepper. Mix well.
  5. Fold in corn, green onions, red bell pepper, jalapeño, and cilantro if using.

For Cold Dip:
6. Cover and refrigerate for at least 30 minutes before serving.

For Hot Dip:
7. Preheat oven to 375°F (190°C).
8. Transfer mixture to a baking dish, top with extra cheese, and bake for 20–25 minutes until bubbly and golden.

Notes

Avoid overheating to prevent the dip from separating or becoming greasy.

Adjust creaminess by adding more corn or reducing mayo slightly.

Add cayenne or hot sauce for extra spice.

For a Mexican street corn twist, swap mayo for crema and add cotija cheese and Tajín.
