Ingredients
Fiesta Lime Chicken:
1 pound chicken breasts, pounded to even thickness
2 tablespoons olive oil
2 tablespoons lime juice
Lime zest from 1 lime
1 teaspoon chili powder
1 teaspoon brown sugar
3/4 teaspoon salt
1/2 teaspoon ground cumin
1/2 teaspoon smoked paprika
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/4 teaspoon black pepper
1/2–1 teaspoon chipotle chili powder (optional)
Avocado Salsa:
2 medium avocados, chopped
1 cup cherry tomatoes, quartered (or 2 Roma tomatoes)
Corn from 1 ear
1/3 cup red onion, finely chopped
1/2 red bell pepper, chopped
1 jalapeño, diced (seeds optional)
2 tablespoons cilantro, chopped
1 garlic clove, minced
2 tablespoons lime juice
1/4 teaspoon cumin
1/4 teaspoon salt
1/8 teaspoon pepper
Instructions
In a small bowl, whisk together olive oil, lime juice, lime zest, and all spices. Rub evenly over chicken.
Let chicken marinate for 30 minutes at room temperature or refrigerate up to 8 hours.
Prepare salsa by mixing all ingredients except avocado. Chill for at least 30 minutes.
Heat a skillet or grill pan over medium-high heat. Add chicken and cook 3–5 minutes per side until browned.
Reduce heat, cover, and cook another 5–7 minutes until internal temperature reaches 165°F.
Let chicken rest for 5 minutes before slicing.
Fold avocado into salsa just before serving.
Top chicken with avocado salsa and serve with extra lime if desired.

For extra smoky flavor, grill the chicken instead of using a skillet.
Add jalapeño seeds or extra chipotle powder for more heat.
