Description

This Flavor-Packed Chicken Torta Sandwich is a bold Mexican-style sandwich loaded with juicy chipotle chicken, creamy avocado, refried beans, and melty cheese on crusty bread. Perfect for a quick, satisfying lunch or dinner.

  • 2 telera or bolillo rolls
  • 1 lb boneless, skinless chicken breast or thighs
  • 1 tbsp chipotle in adobo
  • 1 tbsp lime juice
  • 2 cloves garlic, minced
  • 1 avocado, sliced
  • ½ cup refried beans
  • ½ cup shredded lettuce
  • 1 tomato, sliced
  • ¼ onion, thinly sliced
  • ¼ cup pickled jalapeños
  • ¼ cup queso fresco or mozzarella
  • 2 tbsp mayonnaise or crema
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  1. In a bowl, marinate the chicken with chipotle, lime juice, garlic, salt, and pepper for at least 30 minutes.
  2. Heat olive oil in a skillet or grill over medium heat. Cook chicken for 5–6 minutes per side until fully cooked.
  3. Remove from heat, let rest for a few minutes, then slice thinly.
  4. Toast the telera or bolillo rolls until lightly crisp.
  5. Spread refried beans on the bottom half and mayonnaise or crema on the top half.
  6. Layer with sliced chicken, avocado, cheese, lettuce, tomato, onion, and jalapeños.
  7. Close the sandwich and serve immediately.

Notes

For extra flavor, marinate the chicken longer (up to 2 hours).

Swap chicken for steak or grilled veggies if desired.

Toasting the bread helps prevent sogginess.
