- 2 telera or bolillo rolls
- 1 lb boneless, skinless chicken breast or thighs
- 1 tbsp chipotle in adobo
- 1 tbsp lime juice
- 2 cloves garlic, minced
- 1 avocado, sliced
- ½ cup refried beans
- ½ cup shredded lettuce
- 1 tomato, sliced
- ¼ onion, thinly sliced
- ¼ cup pickled jalapeños
- ¼ cup queso fresco or mozzarella
- 2 tbsp mayonnaise or crema
- Salt and pepper to taste
- 1 tbsp olive oil
Instructions
- In a bowl, marinate the chicken with chipotle, lime juice, garlic, salt, and pepper for at least 30 minutes.
- Heat olive oil in a skillet or grill over medium heat. Cook chicken for 5–6 minutes per side until fully cooked.
- Remove from heat, let rest for a few minutes, then slice thinly.
- Toast the telera or bolillo rolls until lightly crisp.
- Spread refried beans on the bottom half and mayonnaise or crema on the top half.
- Layer with sliced chicken, avocado, cheese, lettuce, tomato, onion, and jalapeños.
- Close the sandwich and serve immediately.
Notes
For extra flavor, marinate the chicken longer (up to 2 hours).
Swap chicken for steak or grilled veggies if desired.
Toasting the bread helps prevent sogginess.
