Description

For the Tortellini

  • 20 oz cheese tortellini

For the Steak

  • 1 lb steak (sirloin or ribeye)

Seasoning

  • Salt, to taste
  • Black pepper, to taste
  • 1 tsp garlic powder
  • 1 tsp smoked paprika

For the Creamy Sauce

  • 2 tbsp olive oil
  • 4 tbsp butter
  • 5 cloves garlic, minced
  • 1 cup heavy cream
  • 3/4 cup whole milk
  • 1 1/4 cups parmesan cheese, freshly grated

For Garnish (Optional)

  • Fresh parsley, chopped
  • Red pepper flakes
  • Cracked black pepper

Instructions

  1. Bring a large pot of salted water to a boil. Cook tortellini according to package instructions (3–5 minutes). Drain and set aside.
  2. Heat olive oil in a large skillet over medium-high heat. Season steak with salt, pepper, garlic powder, and smoked paprika.
  3. Sear steak for 3–5 minutes until browned. Remove and set aside.
  4. In the same skillet, melt butter. Add garlic and sauté for 1 minute until fragrant.
  5. Pour in heavy cream and milk. Stir and simmer for 3–4 minutes until slightly thickened.
  6. Gradually whisk in parmesan cheese until smooth and creamy.
  7. Return steak and tortellini to the skillet. Toss together for 2 minutes.
  8. Garnish with parsley, red pepper flakes, and cracked black pepper. Serve immediately.

Notes

Use freshly grated parmesan for a smooth, creamy sauce (pre-shredded may cause graininess).

Keep heat low when adding cheese to prevent separation.

Reheat leftovers with a splash of milk to restore creaminess.

Steak can be sliced after cooking for juicier bites.
