  • ¾ cup chopped fresh cilantro

Instructions

Make the Soup

  1. Heat olive oil in a large stockpot over medium-low heat.

  2. Add diced onion, garlic, and fresh ginger along with a pinch of salt and pepper.

  3. Cook while stirring until the onions soften and become fragrant.

  4. Add shredded chicken, chicken stock, and lime zest.

  5. Bring the soup to a gentle boil.

  6. Reduce heat and simmer for 20–30 minutes while preparing the rice.

  7. Taste and adjust seasoning with salt and pepper if needed.

Make the Cilantro Lime Rice

  1. Rinse the jasmine rice under cold water until the water runs clear.

  2. Bring water or chicken stock to a boil in a saucepan.

  3. Add rice, butter, salt, and pepper.

  4. Reduce heat, cover, and simmer for 12–15 minutes until liquid is absorbed.

  5. Fluff the rice and stir in lime zest, lime juice, and chopped cilantro.

Assemble

  1. Scoop cilantro lime rice into serving bowls.

  2. Ladle the hot soup over the rice.

  3. Garnish with fresh cilantro.

  4. Serve with lime wedges for extra brightness.

Notes

Rotisserie chicken works great in this recipe and saves time.

Fresh ginger gives the soup its signature warm flavor.

Add spinach or baby kale for extra greens.

Store soup and rice separately to keep the texture perfect for leftovers.

The soup keeps well in the refrigerator for up to 3 days.
