Description

A quick and hearty lentil soup that’s packed with flavor, perfect for busy weeknights.


Ingredients

Scale
  • 1 can (15 oz) Goya lentils, drained and rinsed
  • 2 cups chicken or vegetable broth
  • 1 small onion, finely chopped
  • 1 carrot, diced
  • 1 stalk celery, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste
  • Juice of half a lemon
  • Fresh parsley, chopped, for garnish

Instructions

  1. Heat olive oil in a medium saucepan over medium heat.
  2. Add onion, carrot, and celery; sauté for 3–4 minutes until softened.
  3. Stir in garlic, cumin, and smoked paprika; cook for 1 minute until fragrant.
  4. Add Goya lentils and broth. Bring to a simmer and let cook for 5 minutes.
  5. Season with salt, pepper, and lemon juice. Adjust flavors as needed.
  6. Garnish with fresh parsley and serve warm.
