A quick and hearty lentil soup that’s packed with flavor, perfect for busy weeknights.

- 1 can (15 oz) Goya lentils, drained and rinsed
- 2 cups chicken or vegetable broth
- 1 small onion, finely chopped
- 1 carrot, diced
- 1 stalk celery, diced
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- Salt and black pepper to taste
- Juice of half a lemon
- Fresh parsley, chopped, for garnish
Instructions
- Heat olive oil in a medium saucepan over medium heat.
- Add onion, carrot, and celery; sauté for 3–4 minutes until softened.
- Stir in garlic, cumin, and smoked paprika; cook for 1 minute until fragrant.
- Add Goya lentils and broth. Bring to a simmer and let cook for 5 minutes.
- Season with salt, pepper, and lemon juice. Adjust flavors as needed.
- Garnish with fresh parsley and serve warm.
