Description

Greek Chicken Gyro Bowls are a fresh, flavorful Mediterranean dinner made with juicy marinated chicken, rice, crisp vegetables, feta, and creamy tzatziki. Perfect for quick weeknights or meal prep.

For the Chicken Marinade

  • 1.5 pounds chicken thighs (or chicken breast)

  • ¼ cup olive oil

  • 3 cloves garlic, minced

  • ¼ cup freshly squeezed lemon juice

  • 2 tablespoons red wine vinegar

  • 1 tablespoon dried oregano

  • 1 teaspoon ground cumin

  • Salt and black pepper, to taste

For the Bowl Assembly

  • Cooked rice or cauliflower rice

  • Cherry tomatoes, halved

  • Cucumber, diced or sliced

  • Red onion, thinly sliced or pickled

  • Kalamata olives (optional)

  • Feta cheese or goat cheese

  • Fresh parsley, chopped

  • Tzatziki sauce, for serving


Instructions

  1. In a large bowl, whisk together olive oil, garlic, lemon juice, red wine vinegar, oregano, cumin, salt, and black pepper.

  2. Add the chicken to a resealable bag or shallow dish and pour the marinade over it, coating well. Marinate in the refrigerator for at least 30 minutes or up to 4 hours.

  3. Preheat a grill or skillet over medium-high heat. Remove chicken from marinade and let excess drip off.

  4. Cook chicken for 5–7 minutes per side, until fully cooked and internal temperature reaches 165°F.

  5. Transfer chicken to a cutting board and rest for a few minutes, then slice into thin strips.

  6. Assemble bowls with cooked rice, sliced chicken, cherry tomatoes, cucumber, red onion, olives, and feta.

  7. Drizzle with tzatziki sauce, garnish with fresh parsley, and serve.

Notes

Marinating longer enhances flavor.

Store components separately for best texture.

Great for meal prep up to 4 days.

Serve with warm pita bread if desired.
