For the Crust

  • 1 cup Oreo crumbs

  • 2 1/2 tablespoons butter, melted

For the Cheesecake Filling

  • 2 (8 oz) blocks cream cheese, softened

  • 1/2 cup sugar

  • 2 eggs

  • 1 teaspoon vanilla

  • Neon green food coloring

  • Red candies or sprinkles


Instructions

  1. Preheat oven to 350°F and line a cupcake pan with paper liners.

  2. In a food processor, pulse 10–11 Oreos until you have 1 cup of crumbs. Add melted butter and pulse again to combine.

  3. Divide the crumbs evenly among the cupcake liners and press down firmly to form a crust.

  4. In a mixing bowl, beat softened cream cheese and sugar until smooth.

  5. Add eggs and vanilla, mixing until fully combined.

  6. Stir in neon green food coloring until the batter reaches your desired Grinch-like shade.

  7. Spoon about 1/4 cup of cheesecake batter into each liner.

  8. Bake for 15–17 minutes, or until centers are slightly jiggly.

  9. Cool completely in the pan, then refrigerate until firm.

  10. Top with whipped cream and red candies before serving.

Notes

For the smoothest cheesecake filling, be sure the cream cheese is fully softened before mixing.

Do not overbake—the slight jiggle ensures a creamy texture.
