  • 1.5 lbs (700g) baby potatoes, halved or quartered
  • 1 block (7 oz / 200g) feta cheese
  • 1.5 cups cherry tomatoes, halved
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • ½ teaspoon black pepper
  • Salt to taste
  • Fresh basil or parsley (optional, for garnish)

Instructions

  1. Preheat and Prep
    Preheat oven to 400°F (200°C). Wash and cut potatoes. Add them to a baking dish with tomatoes, garlic, olive oil, oregano, pepper, and a pinch of salt. Toss well.
  2. Add the Feta
    Place the feta block in the center of the dish. Drizzle a little olive oil on top.
