- 1 block (7 oz / 200g) feta cheese
- 1.5 cups cherry tomatoes, halved
- 3 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- ½ teaspoon black pepper
- Salt to taste
- Fresh basil or parsley (optional, for garnish)
Instructions
- Preheat and Prep
Preheat oven to 400°F (200°C). Wash and cut potatoes. Add them to a baking dish with tomatoes, garlic, olive oil, oregano, pepper, and a pinch of salt. Toss well. - Add the Feta
Place the feta block in the center of the dish. Drizzle a little olive oil on top. - Roast
Bake for 35–40 minutes, stirring potatoes halfway through, until golden and tender. Tomatoes should be soft and bursting. - Stir and Serve
Remove from oven and mix everything together until feta becomes creamy and coats the potatoes. Garnish with fresh herbs and serve.
