Healthy Baked Feta Potatoes are a simple Mediterranean-inspired dish made with roasted baby potatoes, juicy cherry tomatoes, garlic, olive oil, and creamy baked feta cheese. Ingredients
1.5 lbs (700g) baby potatoes, halved or quartered
1 block (7 oz / 200g) feta cheese
1.5 cups cherry tomatoes, halved
3 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon dried oregano
½ teaspoon black pepper
Salt to taste (use lightly since feta is salty)
Fresh basil or parsley for garnish (optional)
Instructions
Preheat the oven to 400°F (200°C). Wash and cut the baby potatoes into halves or quarters depending on their size.
Prepare the baking dish. Add the potatoes, cherry tomatoes, minced garlic, olive oil, oregano, black pepper, and a light pinch of salt. Toss well to coat everything evenly.
Add the feta. Place the block of feta cheese in the center of the baking dish and drizzle a little olive oil over the top.
Roast the dish. Bake for 35–40 minutes, stirring the potatoes once halfway through cooking for even roasting.
Mix and serve. Remove from the oven and stir the softened feta into the potatoes and tomatoes until a creamy sauce forms. Garnish with fresh basil or parsley and serve warm.
Notes
Use waxy potatoes: Baby potatoes, red potatoes, or fingerlings hold their shape best when roasted.
Stir after baking: Mixing the feta with the roasted vegetables creates a creamy sauce.
