  • 1 medium yellow onion, diced
  • 1 (14 oz) can full-fat coconut milk
  • 3 garlic cloves, minced
  • 1/4 cup sun-dried tomatoes, drained
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • 1 (28 oz) can diced tomatoes with Italian seasoning
  • 2 (19 oz) cans white cannellini beans, drained and rinsed
  • 3 cups reduced-sodium vegetable broth
  • 2 cups fresh spinach, chopped
  • 1 cup rotini pasta (regular or gluten-free)
  • Salt and pepper, to taste
  • Optional: grated parmesan cheese and fresh basil for garnish

Instructions

  1. Heat olive oil in a pan over medium heat. Sauté diced onion for 3–4 minutes until soft and fragrant.
  2. In a blender, combine coconut milk, garlic, sun-dried tomatoes, Italian seasoning, and salt. Blend until smooth.
  3. Transfer sautéed onion and blended mixture to the slow cooker.
  4. Add diced tomatoes, white beans, and vegetable broth. Stir well.
  5. Cook on low for 4–6 hours or high for 2–3 hours.
  6. About 30 minutes before serving, turn heat to high and stir in dry pasta.
  7. Add chopped spinach in the last 5 minutes of cooking.
  8. Season with salt and pepper to taste. Serve warm with parmesan and basil if desired.

Notes

Blend the coconut mixture well for an ultra-creamy texture.

Chop spinach finely for a more subtle, kid-friendly option.

Soup thickens as it sits—add extra broth when reheating.
