  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 medium carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 1 medium potato, diced
  • 1 can (14 oz) diced tomatoes
  • 4 cups vegetable broth (plus more if needed)
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp dried thyme
  • 1/2 tsp dried oregano
  • Salt and black pepper to taste
  • 1 cup chopped spinach or kale (optional)
  • Fresh parsley, for garnish (optional)
  • Lemon wedges for serving (optional)

Instructions

  • Prep the lentils: Rinse the lentils under cold water and set aside.
  • Sauté the veggies: Heat olive oil in a large pot over medium heat. Add the onion, garlic, carrots, and celery. Sauté for 5-7 minutes, until softened.
  • Add the seasonings: Stir in cumin, smoked paprika, thyme, and oregano. Cook for another minute until fragrant.
  • Combine the base: Add the lentils, diced potatoes, diced tomatoes (with their juice), and vegetable broth. Stir to combine.
  • Simmer: Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for 30-40 minutes, stirring occasionally, until the lentils and vegetables are tender.
  • Adjust seasoning: Taste and adjust salt and pepper as needed. If the stew is too thick, add a bit more vegetable broth to reach your desired consistency.
  • Optional greens: Stir in spinach or kale during the last 5 minutes of cooking.
  • Serve: Ladle the stew into bowls, garnish with parsley, and serve with a wedge of lemon for a burst of brightness.
