- 1 cup dried green or brown lentils (rinsed and drained)
- 2 tbsp olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 medium carrots, peeled and chopped
- 2 celery stalks, chopped
- 1 medium potato, diced
- 1 can (14 oz) diced tomatoes
- 4 cups vegetable broth (plus more if needed)
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1/2 tsp dried thyme
- 1/2 tsp dried oregano
- Salt and black pepper to taste
- 1 cup chopped spinach or kale (optional)
- Fresh parsley, for garnish (optional)
- Lemon wedges for serving (optional)
Instructions
- Prep the lentils: Rinse the lentils under cold water and set aside.
- Sauté the veggies: Heat olive oil in a large pot over medium heat. Add the onion, garlic, carrots, and celery. Sauté for 5-7 minutes, until softened.
- Add the seasonings: Stir in cumin, smoked paprika, thyme, and oregano. Cook for another minute until fragrant.
- Combine the base: Add the lentils, diced potatoes, diced tomatoes (with their juice), and vegetable broth. Stir to combine.
- Simmer: Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for 30-40 minutes, stirring occasionally, until the lentils and vegetables are tender.
- Adjust seasoning: Taste and adjust salt and pepper as needed. If the stew is too thick, add a bit more vegetable broth to reach your desired consistency.
- Optional greens: Stir in spinach or kale during the last 5 minutes of cooking.
- Serve: Ladle the stew into bowls, garnish with parsley, and serve with a wedge of lemon for a burst of brightness.
