Description

Lemon Capellini Salad is a light, refreshing pasta dish tossed with juicy tomatoes, capers, and a bright lemon dressing. Perfect for quick summer meals or easy side dishes.


Ingredients

  • 8 oz capellini pasta (or angel hair)
  • Juice of 12 medium lemons
  • 1 tsp lemon zest
  • 3 tbsp extra virgin olive oil
  • 1 ½ tsp garlic salt
  • ½ tsp black pepper
  • ½ cup diced tomatoes, seeds removed
  • 3 tbsp capers, drained
  • 1 tbsp curly parsley, finely chopped

Instructions

  1. Bring a large pot of salted water to a boil and cook the capellini until tender (about 3–5 minutes).
  2. Drain and rinse the pasta with cool water to stop the cooking process.
  3. In a large bowl, whisk together lemon juice, lemon zest, olive oil, garlic salt, and black pepper.
  4. Add the cooled pasta, diced tomatoes, and capers to the bowl. Toss gently to combine.
  5. Stir in the chopped parsley and give everything one final toss.
  6. Serve immediately or chill in the refrigerator before serving.

Notes

Start with one lemon and adjust to taste for balanced flavor.

If the salad tastes too tangy, add a bit more olive oil.

Store in the fridge for up to 5 days and toss before serving.
