Ingredients
Scale
- 8 oz capellini pasta (or angel hair)
- Juice of 1–2 medium lemons
- 1 tsp lemon zest
- 3 tbsp extra virgin olive oil
- 1 ½ tsp garlic salt
- ½ tsp black pepper

- 3 tbsp capers, drained
- 1 tbsp curly parsley, finely chopped
Instructions
- Bring a large pot of salted water to a boil and cook the capellini until tender (about 3–5 minutes).
- Drain and rinse the pasta with cool water to stop the cooking process.
- In a large bowl, whisk together lemon juice, lemon zest, olive oil, garlic salt, and black pepper.
- Add the cooled pasta, diced tomatoes, and capers to the bowl. Toss gently to combine.
- Stir in the chopped parsley and give everything one final toss.
- Serve immediately or chill in the refrigerator before serving.
Notes
Start with one lemon and adjust to taste for balanced flavor.
If the salad tastes too tangy, add a bit more olive oil.
Store in the fridge for up to 5 days and toss before serving.
