These Lentil Sloppy Joes are a cozy, hearty, plant-based twist on the classic sandwich. Ready in just 25 minutes, they’re saucy, satisfying, and perfect for busy weeknights.
Ingredients
2 teaspoons olive oil
1 medium yellow onion, diced
1 green bell pepper, diced
3 cloves garlic, minced
3 cups cooked lentils
2 tablespoons chili powder
2 teaspoons dried oregano
Pinch of cayenne pepper
Salt and black pepper, to taste
2 cups crushed tomatoes
1/4 cup tomato paste
3 tablespoons maple syrup
2 tablespoons yellow mustard
8 small Kaiser rolls or sesame buns
Instructions
Heat olive oil in a large non-stick skillet over medium-high heat.
Add the onion and green pepper and sauté for about 8 minutes, until softened.
Stir in the garlic and cook for 1–2 minutes until fragrant.
Add the lentils, chili powder, oregano, cayenne, salt, and pepper. Stir well.
Mix in the crushed tomatoes and tomato paste. Simmer for 10 minutes, stirring occasionally.
Stir in the maple syrup and mustard and cook for 2 more minutes.
Spoon the lentil mixture onto toasted buns and serve warm.
Notes
If the mixture looks dry, add a few splashes of water or extra crushed tomatoes.
For extra heat, increase cayenne or add hot sauce.
Leftovers store well and taste even better the next day.
