Mediterranean Lemon Chickpea Patties are crispy on the outside, tender on the inside, and bursting with fresh herbs and zesty lemon flavor. Served with a creamy yogurt sauce, this easy and healthy recipe is perfect for quick weeknight meals or light lunches.
Ingredients
For the Patties:
1 can (15 oz) chickpeas, drained and rinsed
1 small onion, finely chopped
2 cloves garlic, minced
1/4 cup fresh parsley, chopped
1/4 cup fresh cilantro, chopped
Zest and juice of 1 lemon
1 teaspoon ground cumin
1/2 teaspoon paprika
Salt and pepper, to taste
3/4 cup breadcrumbs (or gluten-free alternative)
1 egg, lightly beaten (or flax egg for vegan option)
For the Yogurt Sauce:
1 cup plain yogurt (Greek or regular)
1 clove garlic, minced
1 tablespoon lemon juice
Salt and pepper, to taste
Fresh dill or mint (optional)
Instructions
Prepare the chickpeas:
In a large bowl, mash the chickpeas with a fork or potato masher until mostly smooth with some texture remaining.Mix the ingredients:
Add onion, garlic, parsley, cilantro, lemon zest, lemon juice, cumin, paprika, salt, and pepper. Mix well.Form the mixture:
Stir in breadcrumbs and egg (or flax egg). Mix until the mixture holds together. Shape into patties about 1/2 inch thick.Cook the patties:
Heat olive oil in a skillet over medium heat. Cook patties for 4–5 minutes per side until golden brown and crispy.Make the yogurt sauce:
In a small bowl, whisk together yogurt, garlic, lemon juice, salt, and pepper until smooth.Serve:
Serve warm patties with yogurt sauce on the side or drizzled on top.
Notes
For a vegan version, use a flax egg instead of a regular egg.
If the mixture feels too wet, add extra breadcrumbs gradually.
Bake option: Bake at 375°F (190°C) for 20–25 minutes, flipping halfway.
These patties freeze well for up to 2 months.
