Description

Mediterranean Lemon Chickpea Patties are crispy on the outside, tender on the inside, and bursting with fresh herbs and zesty lemon flavor. Served with a creamy yogurt sauce, this easy and healthy recipe is perfect for quick weeknight meals or light lunches.


Ingredients

For the Patties:

  • 1 can (15 oz) chickpeas, drained and rinsed

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 1/4 cup fresh parsley, chopped

  • 1/4 cup fresh cilantro, chopped

  • Zest and juice of 1 lemon

  • 1 teaspoon ground cumin

  • 1/2 teaspoon paprika

  • Salt and pepper, to taste

  • 3/4 cup breadcrumbs (or gluten-free alternative)

  • 1 egg, lightly beaten (or flax egg for vegan option)

For the Yogurt Sauce:

  • 1 cup plain yogurt (Greek or regular)

  • 1 clove garlic, minced

  • 1 tablespoon lemon juice

  • Salt and pepper, to taste

  • Fresh dill or mint (optional)


Instructions

  1. Prepare the chickpeas:
    In a large bowl, mash the chickpeas with a fork or potato masher until mostly smooth with some texture remaining.

  2. Mix the ingredients:
    Add onion, garlic, parsley, cilantro, lemon zest, lemon juice, cumin, paprika, salt, and pepper. Mix well.

  3. Form the mixture:
    Stir in breadcrumbs and egg (or flax egg). Mix until the mixture holds together. Shape into patties about 1/2 inch thick.

  4. Cook the patties:
    Heat olive oil in a skillet over medium heat. Cook patties for 4–5 minutes per side until golden brown and crispy.

  5. Make the yogurt sauce:
    In a small bowl, whisk together yogurt, garlic, lemon juice, salt, and pepper until smooth.

  6. Serve:
    Serve warm patties with yogurt sauce on the side or drizzled on top.

Notes

For a vegan version, use a flax egg instead of a regular egg.

If the mixture feels too wet, add extra breadcrumbs gradually.

Bake option: Bake at 375°F (190°C) for 20–25 minutes, flipping halfway.

These patties freeze well for up to 2 months.
