Ingredients
4 flour tortillas
1 cup fresh spinach, chopped
1/2 cup shredded mozzarella cheese
1/2 cup crumbled feta cheese
1 small tomato, diced
1/4 cup red onion, thinly sliced
1 tablespoon olive oil
Black pepper, to taste
Instructions
In a mixing bowl, combine mozzarella, feta, spinach, tomato, red onion, and black pepper. Mix well.
Lay one tortilla flat and place one-fourth of the filling on half of the tortilla. Fold over.
Heat a non-stick skillet over medium heat and add olive oil.
Place the folded tortilla in the skillet and cook for 3–4 minutes until golden brown.
Flip carefully and cook another 3–4 minutes until crispy and cheese is melted.
Remove from heat, slice into wedges, and serve warm.
Notes
Add shredded or rotisserie chicken for extra protein.
These quesadillas freeze well—reheat in the oven for best texture.
Avoid overfilling to keep them easy to flip and crispy.
