  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 3 tablespoons butter
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • ½ teaspoon Italian seasoning
  • 1 zucchini, sliced
  • 1 bell pepper, sliced
  • 1 cup cherry tomatoes, halved
  • ½ cup broccoli florets
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Cook the Chicken: Heat olive oil in a large skillet over medium heat. Add chicken, season with salt, pepper, paprika, and Italian seasoning. Cook for about 6–7 minutes until golden and cooked through. Remove from the pan.

  2. Sauté the Veggies: In the same pan, melt butter. Add garlic, zucchini, bell pepper, cherry tomatoes, and broccoli. Cook for 5 minutes until slightly tender.

  3. Combine & Finish: Return the cooked chicken to the pan and toss everything together. Cook for 2 more minutes to blend flavors.

  4. Serve: Garnish with fresh parsley and enjoy warm.
