Hearty Winter Warm-Up Delight


Ingredients

  • 1 cup dry green or brown lentils, rinsed

  • 1 tablespoon olive oil

  • 1 onion, diced

  • 2 carrots, sliced

  • 2 celery stalks, diced

  • 3 garlic cloves, minced

  • 1 teaspoon ground cumin

  • 1 teaspoon smoked paprika

  • 1/2 teaspoon dried thyme

  • 1/2 teaspoon black pepper

  • 1 bay leaf

  • 1 can (14 oz) diced tomatoes

  • 4 cups vegetable broth

  • 2 cups water

  • 1 small potato, diced

  • Salt to taste

  • Fresh parsley for garnish (optional)


Instructions

  1. Heat olive oil in a large pot over medium heat. Add the diced onion, carrots, and celery. Sauté for 5 minutes until softened.

  2. Stir in the minced garlic, ground cumin, smoked paprika, thyme, and black pepper. Cook for 1 minute until fragrant.

  3. Add the lentils, diced tomatoes, vegetable broth, water, bay leaf, and diced potato. Stir well to combine.

  4. Bring the mixture to a boil, then reduce the heat to low and cover the pot. Simmer for 30-35 minutes, stirring occasionally, until the lentils and vegetables are tender.

  5. Remove the bay leaf and season the stew with salt to taste.

  6. Serve hot, garnished with fresh parsley if desired.
