Hearty Winter Warm-Up Delight
Ingredients
1 cup dry green or brown lentils, rinsed
1 tablespoon olive oil
1 onion, diced
2 carrots, sliced
2 celery stalks, diced
3 garlic cloves, minced
1 teaspoon ground cumin
1 teaspoon smoked paprika
1/2 teaspoon dried thyme
1/2 teaspoon black pepper
1 bay leaf
1 can (14 oz) diced tomatoes
4 cups vegetable broth
2 cups water
1 small potato, diced
Salt to taste
Fresh parsley for garnish (optional)
Instructions
Heat olive oil in a large pot over medium heat. Add the diced onion, carrots, and celery. Sauté for 5 minutes until softened.
Stir in the minced garlic, ground cumin, smoked paprika, thyme, and black pepper. Cook for 1 minute until fragrant.
Add the lentils, diced tomatoes, vegetable broth, water, bay leaf, and diced potato. Stir well to combine.
Bring the mixture to a boil, then reduce the heat to low and cover the pot. Simmer for 30-35 minutes, stirring occasionally, until the lentils and vegetables are tender.
Remove the bay leaf and season the stew with salt to taste.
Serve hot, garnished with fresh parsley if desired.
