Ingredients
For the Cake:
- 1 box white or vanilla cake mix 🥮
- 1 cup water 🥣
- 1/3 cup vegetable oil 🛢️
- 3 large egg whites 🥚
For the Filling:
- 1 (3 oz) box raspberry gelatin (like Jell-O) 🍇
- 1 cup boiling water 🔥
- 1/2 cup cold water ❄️
For the Topping:
- 1 (8 oz) container whipped topping (like Cool Whip) or homemade whipped cream 🥛
- 1/2 cup shredded sweetened coconut 🥥
Instructions
1️⃣ Bake the Cake:
Prepare the cake mix according to package instructions, using the water, oil, and egg whites. Bake in a 9×13-inch pan as directed. Allow the cake to cool completely.
2️⃣ Prepare the Raspberry Gelatin:
In a bowl, dissolve the raspberry gelatin in 1 cup of boiling water. Stir in 1/2 cup of cold water and let it cool slightly.
3️⃣ Poke the Cake:
Using the handle of a wooden spoon or a skewer, poke holes all over the cooled cake. Pour the gelatin mixture evenly over the cake, letting it seep into the holes. Refrigerate for 1–2 hours to set.
4️⃣ Add the Topping:
Once the cake has chilled, spread the whipped topping evenly over the surface. Sprinkle with shredded coconut for that Zinger-inspired flavor.
5️⃣ Serve & Enjoy:
Slice the cake and serve chilled. Each bite is light, fruity, and simply delicious!
