Description

Spaghetti & Spinach with Sun-Dried Tomato Cream Sauce is a rich, creamy pasta dish made with tender spaghetti, fresh spinach, and tangy sun-dried tomatoes, all coated in a luscious Parmesan cream sauce. Perfect for a quick weeknight dinner or an elegant meal, this recipe delivers bold flavor with simple ingredients in just 30 minutes.

Ingredients

Scale
  • 12 oz spaghetti
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Crushed red pepper flakes (optional)

Instructions

  1. Bring a large pot of salted water to a boil and cook spaghetti until al dente. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add garlic and sauté for about 1 minute until fragrant.
  3. Stir in sun-dried tomatoes and fresh spinach. Cook until spinach wilts.
  4. Pour in heavy cream and bring to a gentle simmer. Reduce heat.
  5. Gradually stir in Parmesan cheese until the sauce becomes smooth and creamy.
  6. Add cooked spaghetti to the skillet and toss to coat evenly.
  7. Season with salt, pepper, and red pepper flakes if desired. Serve hot with extra Parmesan.

Notes

Keep heat low when adding cream to prevent curdling.

Use oil-packed sun-dried tomatoes for extra flavor.

Add Parmesan off heat for a smoother sauce.

Reserve a bit of pasta water to loosen the sauce if needed.
