Ingredients
4 boneless, skinless chicken breasts (about 2 pounds)
1 cup pineapple juice
1 cup diced pineapple (fresh or canned)
½ cup soy sauce
¼ cup brown sugar
2 cloves garlic, minced
1 teaspoon ground ginger
¼ teaspoon black pepper
Optional Garnishes
Sliced green onions
Sesame seeds
Red pepper flakes
Fresh cilantro or parsley
Instructions
Place the chicken breasts in the bottom of the crockpot. Leave whole or cut into chunks if preferred.
In a bowl, whisk together pineapple juice, diced pineapple, soy sauce, brown sugar, garlic, ginger, and black pepper until combined.
Pour the sauce over the chicken, making sure all pieces are coated.
Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours, until the chicken is tender and fully cooked.
Shred the chicken using two forks and stir it back into the sauce.
Serve hot with desired garnishes and your favorite sides.
Notes
For a thicker sauce, remove the lid during the last 30 minutes of cooking.
Chicken thighs can be substituted for extra juiciness.
