  • 2 cans (15 oz each) cannellini beans, drained and rinsed
  • 1/2 cup vegetable or chicken broth
  • 4 tbsp unsalted butter
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp fresh basil, chopped
  • 1/4 cup grated Parmesan cheese
  • 1/2 tsp red pepper flakes
  • 1 tbsp lemon juice
  • Salt and black pepper, to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat until shimmering.
  2. Add minced garlic and cook for 1–2 minutes until fragrant.
  3. Stir in sun-dried tomatoes and cook for another minute.
  4. Add cannellini beans and gently stir to combine.
  5. Pour in broth and bring to a gentle simmer for 5–7 minutes.
  6. Reduce heat to low and add butter one tablespoon at a time, stirring until melted.
  7. Stir in parsley, basil, and red pepper flakes.
  8. Add Parmesan cheese and stir until melted and creamy.
  9. Season with lemon juice, salt, and black pepper to taste.
  10. Serve hot, garnished with extra herbs if desired.

Notes

Reserve a bit of bean liquid to thicken the sauce if needed.

Store leftovers in the refrigerator for up to 4 days.
