Ingredients

  • 2 cans butter beans, drained and rinsed

  • 2 tablespoons olive oil

  • 1 medium onion, finely chopped

  • 3 cloves garlic, minced

  • 1 cup cherry tomatoes, halved

  • 1 teaspoon crushed red pepper flakes

  • 1 cup vegetable broth

  • 1/2 cup heavy cream

  • 1/2 cup grated Parmesan cheese

  • Salt, to taste

  • Black pepper, to taste

  • 1 tablespoon fresh basil, chopped

  • 1 tablespoon fresh parsley, chopped

  • Zest and juice of 1 lemon


Instructions

  1. Heat olive oil in a large skillet over medium heat.

  2. Add the chopped onion and sauté for about 5 minutes until soft and translucent.

  3. Stir in the garlic and cook for 1–2 minutes until fragrant.

  4. Add cherry tomatoes and crushed red pepper flakes, cooking for 4–5 minutes until tomatoes soften.

  5. Add butter beans and stir to coat them in the sauce.

  6. Pour in vegetable broth and bring to a gentle simmer for 5 minutes.

  7. Stir in heavy cream and Parmesan cheese, letting the sauce thicken for 3–4 minutes.

  8. Season with salt and pepper to taste.

  9. Remove from heat and stir in basil, parsley, lemon zest, and lemon juice.

  10. Serve warm with extra Parmesan if desired.

Notes

Butter beans can be swapped with cannellini beans or chickpeas.

If the sauce becomes too thick, add a splash of vegetable broth.

Delicious served with crusty bread, over pasta, or spooned onto rice.
