Tzatziki Dressing

  • 1 cup plain Greek yogurt

  • 1/2 cup grated English cucumber, excess moisture squeezed out

  • 3 tablespoons fresh lemon juice

  • 2 garlic cloves, peeled and grated

  • 2 tablespoons chopped fresh dill

  • 2 tablespoons chopped fresh parsley

  • 1 teaspoon sea salt

  • 1/2 teaspoon freshly ground black pepper

Chicken Salad

  • 4 cups cooked chicken, chopped or shredded

  • 1 cup diced cucumber

  • 1/2 cup diced celery

  • 1/2 cup diced red onion

  • 1/2 cup crumbled feta cheese

Optional for Serving

  • Pita chips

  • Lettuce cups

  • Pita bread or wraps

  • Chopped tomatoes

  • Kalamata olives

  • Extra feta and herbs


Instructions

1. Prepare the tzatziki dressing
In a medium bowl, combine the Greek yogurt, grated cucumber, lemon juice, garlic, dill, parsley, salt, and pepper. Stir until smooth and well blended.

2. Add the chicken and vegetables
Add the cooked chicken, diced cucumber, celery, red onion, and feta cheese to the bowl.

3. Mix the salad
Stir gently until all ingredients are evenly coated with the creamy tzatziki dressing.

4. Taste and adjust seasoning
Taste the salad and add extra lemon juice, salt, or pepper if desired.

5. Serve
Serve chilled over greens, in a sandwich, stuffed into a pita pocket, wrapped in lettuce leaves, or alongside pita chips.

Notes

Rotisserie chicken works perfectly and saves time.

Be sure to squeeze excess water from the grated cucumber to keep the dressing creamy.

The salad tastes even better after chilling in the refrigerator for 30 minutes.

Store leftovers in an airtight container in the fridge for up to 3 days.
