- ½ cup low sodium soy sauce
- 1–2 teaspoons minced garlic
- ¾ cup low sodium chicken broth
- 1 ½ cups uncooked instant white rice
- ½ cup diced red onion
- 1 red bell pepper, chopped
- 1 (20 oz) can pineapple tidbits in juice (do not drain)
- 1 lb boneless skinless chicken breasts or tenderloins, diced
- Optional: chopped cilantro and cooked bacon for garnish
Instructions
- Preheat oven to 425°F and spray a baking dish with cooking spray.
- In a large bowl, whisk together brown sugar, soy sauce, garlic, and chicken broth.
- Add rice, onion, bell pepper, pineapple with juice, and chicken. Mix well.
- Transfer mixture to the baking dish and cover tightly with foil.
- Bake for 50 minutes.
- Remove foil, stir the casserole, and return to oven uncovered.
- Bake for an additional 10 minutes, until chicken is cooked through and rice is tender.
- Let rest for 5 minutes before serving. Garnish with cilantro and bacon if desired.

- Use instant rice for best results—regular rice may not cook fully.
