Description

Aloha Pineapple Chicken Rice Casserole is a sweet and savory one-pan dinner made with juicy chicken, pineapple, and tender rice baked in a flavorful sauce.

Ingredients

Scale
  • ½ cup brown sugar
  • ½ cup low sodium soy sauce
  • 12 teaspoons minced garlic
  • ¾ cup low sodium chicken broth
  • 1 ½ cups uncooked instant white rice
  • ½ cup diced red onion
  • 1 red bell pepper, chopped
  • 1 (20 oz) can pineapple tidbits in juice (do not drain)
  • 1 lb boneless skinless chicken breasts or tenderloins, diced
  • Optional: chopped cilantro and cooked bacon for garnish

Instructions

  1. Preheat oven to 425°F and spray a baking dish with cooking spray.
  2. In a large bowl, whisk together brown sugar, soy sauce, garlic, and chicken broth.
  3. Add rice, onion, bell pepper, pineapple with juice, and chicken. Mix well.
  4. Transfer mixture to the baking dish and cover tightly with foil.
  5. Bake for 50 minutes.
  6. Remove foil, stir the casserole, and return to oven uncovered.
  7. Bake for an additional 10 minutes, until chicken is cooked through and rice is tender.
  8. Let rest for 5 minutes before serving. Garnish with cilantro and bacon if desired.

Notes

  • Use instant rice for best results—regular rice may not cook fully.
  • Do not drain the pineapple; the juice adds essential flavor and moisture.
  • Cut chicken into even pieces for consistent cooking.
  • Letting the casserole rest helps the sauce thicken naturally.
