  • 1 1/2 cups uncooked white jasmine rice
  • 2 1/4 cups low sodium vegetable broth
  • 1 tbsp olive oil
  • 1/4 cup shallot, finely diced
  • 2 cloves garlic, minced
  • 2 cups baby bok choy, roughly chopped
  • 2 cups baby spinach
  • 1 tsp ground turmeric
  • 1/2 tsp sea salt (plus more to taste)
  • 1/4 tsp black pepper
  • 1 (14 oz) can full-fat coconut milk
  • 23 green onions, diced

Instructions

  1. Cook the rice:
    In a pot, combine jasmine rice and vegetable broth. Bring to a boil, then cover and simmer for 15 minutes. Remove from heat and let it steam for 10 minutes.
  2. Prepare ingredients:
    While the rice cooks, chop the bok choy, spinach, shallot, and garlic.
  3. Sauté aromatics:
    Heat olive oil in a large pan over medium heat. Add shallot and garlic, cooking for about 30 seconds until fragrant.
  4. Add greens and spices:
    Stir in bok choy, spinach, turmeric, salt, and pepper. Cook for about 2 minutes until the greens soften.
  5. Add coconut milk:
    Reduce heat and pour in the full can of coconut milk. Stir and let simmer for 5 minutes.
  6. Combine everything:
    Turn off heat and stir in the cooked rice until fully coated.
  7. Finish and serve:
    Stir in green onions and serve warm.

Notes

  • For extra protein, add chickpeas, tofu, or shredded chicken.
  • If the rice thickens too much, add a splash of broth to loosen it.
  • Fresh garlic and shallots give the best flavor—don’t skip them!
  • A squeeze of lime before serving adds a fresh, bright finish.
