Ingredients
For the Stuffed Chicken:
2 boneless, skinless chicken breasts
1 Honeycrisp apple, cored and thinly sliced
1 wedge Brie cheese (about 4 oz), sliced
1 tablespoon olive oil, for searing
Salt, to taste
Black pepper, to taste
Paprika, to taste
For the Maple Dijon Glaze:
¼ cup pure maple syrup
2 teaspoons Dijon mustard
½ teaspoon dried thyme
1–2 garlic cloves, minced
Instructions
1. Preheat the Oven: Preheat your oven to 400°F (200°C).
2. Prepare the Glaze: In a small bowl, whisk together maple syrup, Dijon mustard, dried thyme, and minced garlic until well combined. Set aside.
3. Prepare the Chicken: Place chicken breasts on a cutting board. Carefully cut a horizontal pocket into each breast, about ¾ of the way through, without cutting completely through. Season both sides with salt, black pepper, and paprika.
4. Sear the Chicken: Heat olive oil in a large oven-safe skillet over medium-high heat. Add chicken breasts and sear for 2–3 minutes per side until golden brown. Remove the skillet from the heat.
5. Stuff the Chicken: Fill each chicken breast with approximately 3 slices of Brie cheese and 4–5 thin apple slices. Secure with toothpicks if needed. Arrange remaining apple slices around the chicken.
6. Add the Glaze: Brush the maple Dijon glaze generously over the stuffed chicken breasts.
7. Bake: Transfer the skillet to the preheated oven and bake for 20–22 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
8. Rest and Serve: Remove from the oven and let rest for 5 minutes. Remove any toothpicks and drizzle with warm pan juices before serving.
Notes
Best Apples: Honeycrisp apples provide the perfect balance of sweetness and crispness. Pink Lady or Granny Smith apples also work well.
Brie Cheese: The rind is edible and can be left on. Slice the cheese thinly for even melting.
Avoid Overstuffing: Too much filling may cause the cheese to spill out during baking.
No Oven-Safe Skillet? Sear the chicken in a regular skillet, then transfer to a baking dish before baking.
Check Temperature: Use a meat thermometer to confirm the chicken reaches 165°F (74°C).
Storage: Refrigerate leftovers in an airtight container for up to 3–4 days.
Serving Suggestions: Pair with mashed potatoes, roasted Brussels sprouts, wild rice, or a fresh green salad.
