This Arugula Watermelon Feta Salad is a refreshing summer salad made with juicy watermelon, peppery arugula, creamy feta cheese, fresh herbs, and a bright lemon dressing. Ready in just 15 minutes, it’s the perfect side dish for cookouts, picnics, and warm-weather meals.

- 4 cups watermelon, cut into 1-inch cubes
- 3 tablespoons olive oil
- Zest of 1 medium lemon
- 1 tablespoon fresh lemon juice
- 1/4 cup fresh mint, basil, oregano, parsley, or dill, chopped
- 4 ounces feta cheese, crumbled
- 3 cups fresh arugula
- Freshly ground black pepper, to taste
- Kosher salt, to taste (optional)
Instructions
- In a large bowl, whisk together the olive oil, lemon zest, lemon juice, and chopped herbs.
- Add the watermelon cubes and gently toss to coat with the dressing.
- Add the crumbled feta cheese, arugula, and black pepper.
- Toss gently until combined.
- Taste and add salt if needed.
- Garnish with extra fresh herbs and serve immediately or chilled.
Notes
Spearmint is especially delicious with watermelon, but basil, parsley, dill, or oregano work beautifully too.
For the freshest texture, assemble just before serving.
Feta adds plenty of saltiness, so taste before adding extra salt.
Great served alongside grilled salmon, chicken, shrimp, or Mediterranean-inspired dishes.
To make it vegan, substitute dairy-free feta.
