Description

This cozy Autumn White Bean and Bacon Soup is packed with tender cannellini beans, smoky crispy bacon, sweet carrots, and fresh rosemary in a rich, creamy broth. It’s a hearty, comforting fall soup that’s perfect for family dinners, meal prep, and chilly evenings.

Ingredients

Scale
  • 2 cups (404 g) dried cannellini beans

  • 5 strips bacon, chopped into small pieces

  • 1 medium onion, diced

  • 2 cloves garlic, minced

  • 4 medium carrots, peeled and chopped

  • 1 tablespoon fresh rosemary, chopped

  • 4 cups (946 ml) chicken stock, plus more as needed

  • 1 tablespoon tomato paste

  • Salt and black pepper, to taste

Instructions

  1. Soak the beans: Place dried cannellini beans in a large bowl, cover generously with cold water, and soak for at least 12 hours or overnight. Drain and rinse thoroughly.

  2. Cook the bacon: In a large stockpot or Dutch oven over medium heat, cook chopped bacon until golden and crispy. Transfer to a paper towel-lined plate, leaving approximately 3 tablespoons of bacon fat in the pot.

  3. Sauté the vegetables: Add diced onion and chopped carrots to the bacon fat. Cook for about 5 minutes until slightly softened. Stir in minced garlic and rosemary and cook for another minute.

  4. Add the remaining ingredients: Pour in the chicken stock, add the drained beans, and stir in the tomato paste until combined.

  5. Cook the soup: Bring to a full boil and boil for at least 30 minutes, adding hot stock or water as needed to keep the beans covered. Reduce heat, partially cover, and gently simmer until the beans are completely tender, usually another 30–60 minutes or longer.

  6. Blend for creaminess: Remove from heat. Carefully use an immersion blender to blend part of the soup until creamy, leaving some whole beans for texture.

  7. Season: Add salt and freshly ground black pepper to taste. Adjust consistency with extra stock if needed.

  8. Serve: Ladle into bowls, top with reserved crispy bacon, and garnish with additional fresh rosemary if desired. Serve warm with crusty bread.

Notes

  • Beans: Cannellini beans work best, but great northern or navy beans are good substitutes.

  • Quick alternative: Use 3–4 cans (15 oz each) of drained, rinsed cannellini beans to skip soaking and shorten cooking time.

  • Creamy texture: Blend approximately one-third of the cooked beans for a thick, creamy consistency without heavy cream.

  • Broth: Add extra chicken stock or water if the soup thickens too much.

  • Bacon: Reserve crispy bacon for topping to maintain its crunch.

  • Storage: Refrigerate in airtight containers for up to 3–4 days.

  • Freezing: Freeze for up to 3 months for best quality.

  • Reheating: Warm gently on the stovetop, adding extra broth as needed. Reheat to 165°F (74°C).
