Description

This creamy Avocado Carbonara combines tender linguine with a silky avocado, garlic, kale, and Parmesan sauce, then finishes it with crispy bacon. Fresh lemon and a hint of cayenne balance the richness for an easy, flavorful pasta dinner.


Ingredients

  • 1 lb linguine noodles
  • 2 ripe avocados, pitted and peeled
  • 2 egg yolks
  • 2 large kale leaves
  • 34 garlic cloves
  • ¼ cup extra virgin olive oil
  • 1½ tablespoons lemon juice
  • 1 teaspoon kosher salt
  • ½ teaspoon paprika
  • Pinch of cayenne pepper
  • 1 cup reserved pasta water
  • 45 slices bacon, cooked and crumbled
  • ⅓ cup Parmesan cheese, shredded

Instructions

  • Bring a large pot of generously salted water to a boil. Add the linguine and cook until al dente according to package directions.
  • While the pasta cooks, add the avocados, egg yolks, kale, garlic, olive oil, lemon juice, kosher salt, paprika, and cayenne to a blender or food processor. Blend until smooth.
  • Before draining the linguine, reserve 1 cup of the hot pasta water.
  • Turn the blender to low and slowly pour the hot pasta water into the avocado mixture. Blend until smooth and creamy.
  • Drain the linguine and immediately toss it with the avocado sauce until every strand is evenly coated.
  • Add the crumbled bacon and shredded Parmesan. Toss until combined.
  • Serve immediately, adding extra Parmesan, black pepper, or a pinch of cayenne if desired.

Notes

  • Use ripe but firm avocados for the smoothest sauce. Reserve the pasta water before draining—it helps loosen the avocado mixture and coat the linguine. For the best green color and creamy texture, prepare the sauce while the pasta cooks and serve the finished Avocado Carbonara immediately.
