For the Cod

  • 4 thick cod fillets
  • 1 teaspoon salt
  • 1 teaspoon black pepper

For the Sauce

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 can full-fat coconut milk
  • 3 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest

Instructions

  1. Preheat oven to 350°F (180°C).
  2. Season cod fillets with salt and pepper.
  3. Heat olive oil in a skillet over medium heat. Sauté onion until translucent.
  4. Add garlic and ginger, cook until fragrant.
  5. Stir in coconut milk, lemon juice, and lemon zest. Simmer for a few minutes.
  6. Place cod fillets in a baking dish and pour sauce over them.
  7. Bake for 20–25 minutes, until fish flakes easily with a fork.
  8. Serve warm, optionally garnished with fresh herbs.

Notes

Garnish with fresh cilantro or parsley for added freshness.

Use full-fat coconut milk for a richer, creamier sauce.
