- 4 thick cod fillets

For the Sauce

- 1 medium onion, chopped
- 2 cloves garlic, minced

- 1 can full-fat coconut milk
- 3 tablespoons fresh lemon juice
- 1 teaspoon lemon zest
Instructions
- Preheat oven to 350°F (180°C).
- Season cod fillets with salt and pepper.
- Heat olive oil in a skillet over medium heat. Sauté onion until translucent.
- Add garlic and ginger, cook until fragrant.
- Stir in coconut milk, lemon juice, and lemon zest. Simmer for a few minutes.
- Place cod fillets in a baking dish and pour sauce over them.
- Bake for 20–25 minutes, until fish flakes easily with a fork.
- Serve warm, optionally garnished with fresh herbs.
