  • 2 tablespoons freshly squeezed lemon juice

  • 1 garlic clove, minced
  • 2 tablespoons old-style Dijon mustard
  • 5 skinless salmon fillets (about 5 oz each)
  • ½ teaspoon ground black pepper
  • Salt, to taste

Lemon Butter Cream Sauce

  • ¼ cup unsalted butter
  • 1½ tablespoons minced garlic
  • ½ cup heavy cream or half-and-half
  • 12 tablespoons freshly squeezed lemon juice
  • 1 tablespoon parsley, finely chopped
  • ½ teaspoon ground black pepper
  • Salt, to taste
  • Lemon slices, for serving

Instructions

  1. Preheat oven to 425°F (220°C) and position the rack in the center.
  2. In a medium bowl, whisk together lemon juice, olive oil, garlic, and Dijon mustard.
  3. Arrange salmon fillets in a baking dish or oven-safe skillet. Pour the lemon mustard mixture over the salmon and rub evenly. Season with salt and black pepper.
  4. Bake for 10–15 minutes, or until the salmon flakes easily with a fork.
  5. Meanwhile, melt butter in a saucepan over medium-low heat. Add garlic and sauté for 30 seconds until fragrant.
  6. Pour in heavy cream and bring to a gentle simmer. Cook until slightly thickened.
  7. Remove from heat and stir in lemon juice, parsley, salt, and black pepper.
  8. Pour the creamy lemon butter sauce over the baked salmon.
  9. Let rest for 5 minutes before serving with fresh lemon slices.
